Mango Cheesecake Ice Cream



Hello, Summer...

I've been missing from this space for months. It seems that writing dissertations takes up a lot of time. Even when there is lots of procrastination involved. In an ideal world I'd be telling you about the many, many new recipes I tested during this time. But not today. 

Looking through my archives I came across this photo from the end of summer last year. It was meant to make its' way into a post but somehow never did. How lucky to have found it now since it gave me a chance to do some more digging and come up with the recipe for this luscious ice cream. 

I first came across it when I was searching for ways to use up a large tub of Labneh (yogurt cheese) in my fridge. I had halved the recipe since I was skeptical and was in no way prepared for how delicious it was going to be. The addition of yogurt adds a smooth, rich flavor similar to cream cheese but contains far less fat making this a less guilty summery treat. I adapted the original recipe only in that I used  pureéd mangoes instead of strawberries. But having made it with both mangoes & strawberries and then just plain, without fruit pureé, we love all three versions equally well chez moi. 

I've got a batch already chilling in my fridge, ready to be churned. Meanwhile here's the recipe because I know you'll want to try it: 

Mango Cheesecake Ice Cream 
adapted from the recipe here

7.5 ounces (about 1 cup) Labneh or yogurt cheese (recipe here)
1/2 cup sugar
3/4 whole milk
1/2 cup whipping cream
1/4 tsp lemon juice
1/4 tsp salt
1 cup mango pureé

In a stand mixer, beat the cheese and sugar till smooth (around 2 minutes).

Add in the milk and cream and continue beating on medium till smooth. Mix in lemon juice and salt. Refrigerate for 4 hours or overnight. Churn in ice-cream maker, freeze at least 2 hours. 

Mango Pureé  :

1.5 Lb chopped, fresh mango
1/4 cup sugar (use more if your mangoes are not sweet)

Pureé the fruit and sugar together. Chill in fridge till ready to use. 


To assemble:

Add a thin layer of pureé on the bottom of your ice-cream container. Top with a third of your ice cream and gently swirl with a spoon. Repeat layers and swirl, ending with a layer of ice cream.

Pecan Pie Mini-Tarts with Yogurt Cheese Pastry



I'm in love with the buttery smell that comes from my hands and fills the air when I make tarts and pies.

And despite all my best intentions not to do any rich baking, here I was again - leafing through my cook books yesterday and stopping at each mention of these sinful treats. . . I spent the past week mostly away from the internet - just to make my days a little less complicated, to kick back and enjoy a rare break in routine and to, once again, make time for things I enjoy best.

And that brings me to these mini-tarts. The pecan-pie filling is crusty on top, chewy-gooey on the inside. They are a snap to make and I found them too tempting not to share.


Pecan Pie Tarts with Yogurt Cheese Pastry

For the Tart Shells:
 1/2 cup butter, softened
1/3 cup powdered sugar
3 ounces (6 tbsp) yogurt cheese
1 tsp vanilla
1/4 tsp salt
1 cup flour

For the Filling:
 1 egg, beaten
1 tsp vanilla extract
1/2 cup coarsely chopped pecans
2 tbsp butter, melted
3/4 cup brown sugar
To make the tart shells: 

Preheat Oven to 350. 
Place all the ingredients in a food processor and pulse until the mixture forms a ball. Wrap dough in plastic wrap and refrigerate for at least 1 hour. 

Flour  hands and shape dough into 24 balls. Press dough with fingers up the sides of a mini muffin tin to fill each muffin cup. Set aside. 
Filling: 
Stir together the ingredients in a small bowl until mixed. 

Fill each tart shell about 2/3 full and bake 25-30 minutes. Cool tarts in pan for 5 minutes and then remove to cooling rack. 

Dust with powdered sugar or top with a dollop of whipped cream to serve. Makes 24 mini-tarts.

Cinnamon Danish Toast with Yogurt Cheese

Yogurt is one of my favorite foods. I can eat it for breakfast or as a snack at any time during the day.

Some time back I came across a book called 101 Things to do with Yogurt. I had to buy it knowing what a versatile food yogurt is and was eager to learn how to use it as a base for or as a healthy substitute in recipes. 

It was hard to decide what to make first out of the book; Cinnamon Danish Toast sounded like a good start. It required me to make Yogurt Cheese to begin with and so I made a small batch over the weekend. And I made the Cinnamon Danish Toast for breakfast this morning.
